
Butter Sauce with Salmon Cakes
Ingredients: (cooked)salmon, parsley, scallions, mashed potatoes, egg, bread crumbs, salt, black pepper, oil/butter, lemon.
Basically, mix everything together into the mashed potatoes, and then coat with bread crumbs (using egg as adhesive). Fry or boil. Sauce is equally simple: heat butter, lemon juice, and a bit of water and salt or pepper to taste.
Pretty decent recipe. Salmon flavor comes through alright. Though two cakes may look like very little food (and indeed, I ate the entire batch, all seven, in one night), the amount of potatoes and salmon in there is deceptive. One batch according to recipe makes about 6. This is with 2 2/3 cups of mashed potatoes and half a pound of salmon. And now I feel slightly...stuffed...
Broiling might be better than frying, will have to try that next time. Sauce goes very well with salmon. Just don't be like me and eat 7. 2 to 3 should be good. Pair it with a light fettucini or just some vegetable might also be good. Overall, a success for first time through.
Oh yeah, since I didn't have thinly sliced zucchini or anything for garnish, I just sprinkled some more parsley on...I like parsley...and cilantro. yum.
Note to self: cutting out the background and replacing it with white looks nasty. Gotta come up with a better background...
