Not quite risotto. I bought some CostCo rotisserie chicken and, after having finished all the meat an Asian could find, made some stock with the bones/frame. The stock came out decent so I decided to try making rice with the stock (rather than water). Sauteed some scallions and mushrooms in butter, mixed in rice, then put it all into my rice cooker. Added in basil and chicken stock. Rice came out a bit bland (need to reduce stock more next time) but ok. Couple with a bit of bok choy and some prosciutto wrapped asparagus. Paired with a 2001 (I think) Beringer Zinfandel. The Beringer was strong but smooth. Label claimed cherry and I tasted quite a bit of Earth. The dinner was made for me and A (who lives diagonally across the hall) and she suggested I take a picture so I did. Damn long exposure time...can't hold hands still...
